Culinary Guide and journalist Katie Parla, an Italian cooking expert based in Rome, shares some of her favorite recipes from across the country—everything from aperitivi to pizza, pasta and much more—and how to cook them all easily at home. Plus, get her best recommendations for creating an aperitivo bar and her ideal curated wine pairings to complement each dish, bringing all the best flavors of Italy you’ve been craving right to you!

Wednesday, September 8, 12:00 p.m. ET: Milanese Aperitivo 
At Milan’s popular hangout, Bar Basso, Negroni Sbagliati and Campari spritzes are served in comically large hand-blown Venetian glass goblets alongside snacks that pair perfectly. In this session, Katie will teach you how to mix up both (and tell their eclectic history). 
Cocktail tips: Get Katie’s take on how to build the ideal Italian aperitivo bar from the coc.

Wednesday, October 6, 12:00 p.m. ET: Pizza Napoletana at Home in Your Home Oven (or Ooni)
After writing four cookbooks featuring pizza dough (including one dedicated entirely to pizza), Katie discovered that baking a casa is twice as satisfying as going out for a pie—and brings boundless joy to your guests, every time. Whether you have an authentic home oven (or Ooni) or not, you can create delicious, thick-rimmed, Naples-inspired pizza with Katie’s fool-proof recipe. She’ll teach you the techniques of mixing, shaping and baking—and how to add toppings that won’t weigh down your pie.
Wine advice: Katie will recommend Campanian wine pairings from San Francisco’s Biondivino (which can ship to most U.S. states), along with general alternate types of wine for those who wish to shop elsewhere.  

Wednesday, November 3, 12:00 p.m. ET: Dueling Pastas - Roman Pasta Classics
Carbonara and Cacio e Pepe are among the many carb-based pillars of Roman cuisine. While Carbonara combines eggs, Pecorino Romano, guanciale (cured pork jowl) and black pepper, Cacio e Pepe is a simple sauce of Pecorino and black pepper. With a few tricks of the trade, it’s quick and easy to pull off these deeply satisfying Roman classics at home. Katie will demystify the techniques and teach you how to make these sublime creamy sauces—without actually using cream!

Wednesday, December 1, 12:00 p.m. ET: Pasta e Fagioli, A Tuscan Staple
Pasta with beans is one of those dishes that Tuscans have been eating since time immemorial—legumes were the lifeblood of Tuscany for millennia. There is no purer Tuscan dish. You can find it served in the rolling hills of Montalcino as well as the sea air-swept bluffs of the island of Giglio. Indeed, the recipe you will cook comes from that gorgeous isola and was taught to Katie by two eccentric winemakers who love and ferment grapes in a retired windmill above the port. 
Wine advice: Katie will suggest a Tuscan wine pairing from San Francisco’s Biondivino (which can ship to most U.S. states). Should you not be able to order these wines, you can shop for similar varieties at your local wine shop.

Note: Each session will be recorded and will be made available following the program, if you are unable to attend a session. Attendance at every session, however, is recommended for an optimal learning experience, as there will be Q&A and discussion in all Indagare Clubs.

The terms and conditions listed below apply to you and your participation in Indagare Travel’s Club Program. 

Deposit, Payment and Cancellation Policies: The payment for an Indagare Club booking is due in full at the time of booking. Should you wish to cancel, you have 7 days after confirmation to do so. The payment is nonrefundable after this time. Tier 1 Members receive a $200 credit towards Club fees. Tier 1 and TIer 2 Members receive a pass to invite one nonmember to sign up (at full cost). Should you not be able to participate in a Club session, we ask that you alert the Indagare team by emailing global.classroom@indagare.com at least 24 hours prior to Club start time. You also have the option to invite a guest to participate in your place should you need to miss a session, however, if you choose to do so, we ask that in your email to Global Classroom that you share your guest's name and email so that we may then send them the Zoom link in advance of the session.  

Changes to Programs or Program Delivery: Programs are subject to change or cancellation without notice, due to, for example, circumstances outside of Indagare Travel’s control. Should Indagare need to cancel a Club session due to unforeseen circumstances, Indagare will reschedule the session.

Not included in program rates: Costs of any additional tools or ingredients required for the Program. 

Intellectual Property: You agree that all information presented in each Program, including the Program title, is the intellectual property of Indagare Travel and/or its third party partners. All information presented is intended for one-time use by you unless otherwise agreed and is not to be copied or distributed under any circumstances by you or any of your guests attending or participating in a Program. You agree that you will comply with these restrictions.

Permission to Use Recorded Program: Programs may be recorded by Indagare Travel and/or its third party partners for a variety of purposes, including promotional and other commercial activities, as well as for training purposes.
